An excellent use for those overripe bananas sitting on your counter is Banana Walnut Bread. It is delicious for breakfast or as a snack. If I only have a banana that needs to be used I will mash it, put it in a ziplock bag and freeze it until I have enough to make this wonderful quick bread. I have tried many recipes for banana bread but have found this to be the best one. I am not sure where it came from since I have tried so many. I have also added things to it like chocolate chips, coconut, and different nuts. Give this a try. I am sure you will like it too.

Ingredients

3 ripe bananas, mashed

1 1/2 cups sugar

1 stick butter, melted

2 eggs

1 teaspoon baking soda

1 teaspoon vanilla extract

2 cups flour

1 cup walnuts, chopped (optional)
Directions
- Preheat oven to 350 degrees and grease standard size loaf pan.
- Mix bananas, sugar, melted butter and eggs until well blended.
- In a separate bowl, mix dry ingredients. Add the wet ingredients to the dry and mix until flour has been moistened. There may be some small lumps. Add walnuts if using.
- Pour into loaf pan and bake until toothpick comes out clean, about 45-50 minutes. Cool for at least 20 minutes before removing from pan. You may have to run a knife around the edge to loosen.
