My mom made this for us when we were younger. It is juicy and has great flavor. Best of all it is easy to make.

Ingredients

  • 5 cups Crispy rice cereal

  • 2 teaspoons paprika

  • 1 egg

  • 1 cup milk

  • 1cup flour

  • 2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 2 teaspoons poultry seasoning

  • 1 teaspoon cayenne pepper

  • 3 pounds chicken washed and patted dry

  • 4 tablespoons butter

Directions

  •  Place crispy rice cereal in shallow dish or pan. Stir in paprika. Set aside
  • In medium mixing bowl, beat egg and milk slightly. Add flour, salt, pepper, poultry seasoning and cayenne pepper. Mix until smooth. Dip chicken in batter. Coat with cereal. Place in single layer, skin side up in shallow baking pan coated with cooking spray or foil lined. Drizzle with melted butter.
  • Bake at 350°F about 1 hour or until chicken is tender, no longer pink and juices run clear. Do not cover pan or turn chicken while baking. Serve hot.
