Easy Chia Pudding

I love this for breakfast in the summer months. It is light and filling and chia seeds are supposed to be good for you. Mix it up the night before and you are ready to go in the morning. Yummy!

Overnight Chia Pudding

Ingredients

  • 1-14 ounce can coconut milk

  • 1/4 cup chia seeds

  • 1/4 cup powdered sweetener, such as Swerve (or to taste)

  • coconut extract, optional

  • almond milk

  • fresh fruit for topping

Directions

  • The night before combine coconut milk, chia seeds, powdered sweetener and extract if using, in a pint sized mason jar with a lid. Fill the jar the rest of the way with almond milk. You can use regular milk or any other milk alternative to suit your tastes.
  • With lid on the jar, give a good shake to mix and place in the refrigerator. Shake another couple of times before going to bed to help keep the seeds from clumping.
  • In the morning, spoon into a bowl and top with your favorite fresh fruit (or jam) and enjoy.
