Nothing says comfort food like fried chicken. With the price of fast food today, we can’t afford to eat out like we used to. We love crispy fried chicken for dinner. This breading recipe is quick and easy to throw together. I like to use boneless, skinless chicken thighs as it is a little healthier with the skin off. We serve this with mashed potatoes (of course) and some biscuits with gravy! Hope you enjoy this chicken recipe as much as we do!

10 boneless, skinless chicken thighs/breasts
1/2 cup all-purpose flour
1/2 cup seasoned breadcrumbs
1 package Ranch dressing mix
1/2 cup parmesan cheese
Salt and pepper to taste
1 egg
1 cup milk
Oil for frying
Directions
- Rinse chicken pieces with cold water and lightly pat dry. Set aside.
- Add dry ingredients into a medium bowl and mix until thoroughly combined.
- In separate bowl, whisk egg and milk together until well mixed.
- Dredge (lightly coat) chicken in flour mixture.
- Dredge chicken in milk/egg mixture and then re-coat in flour mixture.
- Transfer chicken to preheated skillet with enough oil to cover bottom of skillet.
- Cook until internal temperature reaches 165 degrees.
