I like soup on most days but when it is cool and raining (or snowing), a nice bowl of soup really hits the spot. My favorite soups are Baked Potato, Tomato, and Italian Sausage. They are calling for rain today and highs in the 40’s. I checked my pantry and now I have a decision to make since I have everything I need for all of my favorites. Decisions, decisions, decisions…
I have decided on Italian Sausage today. This soup can be customized to suit personal tastes and requirements. I have issues with kidney stones so sometimes I leave out the kale. You can use turkey sausage and turkey bacon if you like. Once you ladle the soup into a bowl you can add a splash of cream or half and half to really mimic that soup from that well know Italian restaurant. I like to serve this soup with a crusty piece of bread, lightly toasted, with a little garlic butter or a grilled (provolone & parmesan) cheese sandwich. A nice side salad would work here too. Italian Sausage Soup

1 lb ground Italian sausage
1/2 medium onion, chopped
2 medium potatoes, cubed
1 32 oz carton chicken broth
2 slices bacon
1 cup kale, chopped
1 tablespoon olive oil
Directions
- Heat olive oil in a soup pot.
- Brown bacon and Italian sausage. Remove from pot onto a paper towel.
- Sautee onion in remaining oil, adding more if necessary, until onion is translucent.
- Add bacon and sausage back into soup pot with onions. Add remaining ingredients and simmer for approximately 30 minutes or until potatoes are tender. Salt and pepper to taste. Serve with crusty bread and salad.
